We start with fresh—never frozen—pork bellies, so our bacon is leaner and offers a better yield than competitors’ products.
Next, we smoke our bacon for hours using real Cherrywood to bring out the rich flavor of our mild, sweet cure. The result is lighter, redder tone and slightly sweeter flavor than our hickory smoked bacon.
Finally, we do something no one else does. We air-chill, instead of brine chill, our bacon. This results in a purer, less salty bacon flavor.
