These extra thick, naturally smoked bacon slices are perfect for chopping and dicing in foodservice applications. To make them, we begin with fresh pork bellies—never frozen—so you get a leaner product with more yield than competitors offer. 

Working in smaller batches, we slow-smoke our bacon for several hours over real hickory. Finally, we dry age our bacon before it’s sliced, making for a better-tasting, less salty bacon flavor. Our entire process takes a lot more time, but the resulting flavor makes it all worth it.

To prep a large batch of bacon before a busy service, use a conventional oven. For easy cleanup, line your sheet pan with foil.

Preheat oven to 350°F. Heat 9–11 minutes.


To cook a few slices of bacon to order, stick with a skillet. If possible, allow bacon to sit at room temperature for 15 minutes before placing into your skillet—the fat will render more quickly, preventing scorching.

Cook on medium heat. Heat 5–7 minutes turning halfway through cook time.
