Ingredients

3/4 cups pineapple preserves
3 tablespoons apple cider or white wine vinegar
1 tablespoon ginger root, fresh grated or bottled
3 jalapeño peppers, roasted, skin and seeds removed
3 red bell peppers, roasted, skin and seeds removed
3 yellow banana peppers, roasted, skin and seeds removed
3 red onions, roasted, sliced
2 tablespoons olive oil
Salt to taste

Preparation

Step 1
Combine preserves, vinegar and ginger root until well blended; set aside.

Step 2
Place peppers, onions, oil and salt in work bowl of food processor; cover. Process until smooth. Place mixture in saucepan on medium heat. Reduce to consistency of peanut butter, stirring occasionally.

Step 3
Divide and spread pepper mixture evenly over one side of each ham slice. Fold ham slices lengthwise into thirds. Thread accordion-style onto metal skewers.

Step 4
Brush lightly with pineapple preserve mixture. Grill for 30 seconds per side or until ham is hot.

Step 5
Remove skewers from grill. Brush lightly with pineapple preserve mixture.
