Preparation
Step 1
Using a knife, cut rounded top of each slice bread to make a straight edge across the top, then cut each slice of bread in half crosswise to create two “sticks.” Set aside.
Step 2
In large mixing bowl, whisk together eggs, milk, brown sugar, vanilla and cinnamon. Set aside.
Step 3
Heat griddle to medium; cut each bacon slice in half crosswise to create 18 pieces. Add several slices bacon to griddle, leaving at least 1 inch between each slice. Cook 3 minutes, turning several times. Dip bread stick into egg mixture and place one stick over each piece bacon. Cook 2 minutes. Flip and cook another 2 minutes. Repeat with remaining bacon and bread.
Step 4
Serve sticks with maple syrup, if desired.
