This kid-friendly twist on a breakfast sandwich fits scrambled eggs, Jones bacon and mascarpone cheese between two waffles.

2 housemade or frozen waffles
2 tablesspoons (2 oz) mascarpone cheese
2 slices Jones Dairy Farm Dry Aged Bacon, cooked and drained
Eggs and fruit for filling
Syrup for serving


Step 1
If using frozen waffles, toast before assembling sandwich. Spread one tablespoon mascarpone on one side of each waffle. Top Mascarpone side of one waffle with bacon and any additional fillings (eggs or fruit). Top with remaining waffle. Press in buttered sandwich press until lightly brown and warmed through. Serve with syrup.
