3/4 cups (4 oz) onion, chopped
3/4 cups (4 oz) red or green peppers, chopped
3/4 cups (4 oz) celery, chopped
3/4 cups (12 oz) butter
24 eggs, slightly beaten
3 pounds Jones Dairy Farm Fully Cooked Sausage, any flavor, chopped and heated
1 teaspoon salt
1 1/2 cups (12 oz) plain yogurt
12 slices pita bread, cut in half
1 tomato, chopped (optional)
Monterey jack cheese, shredded (optional)


Step 1
Sauté onion, peppers and celery in butter in large skillet on medium-high heat about 5 minutes or until tender.

Step 2

Stir in eggs, sausage and salt. Cook on medium heat, drawing cooked portion of eggs to center until all egg mixture is almost set.

Step 3
Stir in yogurt. Cook until egg mixture is completely set.

Step 4

Divide egg mixture evenly between pita halves. Sprinkle with tomato and cheese.
