Ingredients

1 1/2 pounds Jones Dairy Farm All Natural Ground Pork Sausage
1 cup onion, chopped
2 cups prepared salsa verde
12 (6 to 7-inch) flour tortillas, deep fried or baked until golden brown and crisp
3 cups crumbled queso fresco cheese
12 fried eggs, sunny-side up
Garnishes: chopped fresh cilantro, finely diced red onions or sliced green onions, chopped tomato

Preparation

Step 1
Crumble sausage into large sauté pan and cook 2 minutes. Add onion and cook, stirring frequently, until well browned about 6 minutes. Pour off drippings and stir in salsa verde. Continue cooking 7 minutes. 

Step 2
To serve, spoon 1/3 cup of sausage mixture over each warm crisp tortilla. Top with 1/4 cup of cheese and fried egg. Garnish as desired.
