1/4 cup golden raisins
1 cup white zinfandel
1 medium French baguette
7 ounces Jones Dairy Farm Ham, cut into bite size pieces
1 cup zucchini, cut into bite size pieces
8 whole eggs
1 cup milk
2 tablespoons salt
1 teaspoon ground allspice
1 tablespoon apple cider vinegar
1 jalapeño, minced
1/2 cup tarragon, fresh, chopped
1 cup goat cheese, crumbled
Cooking spray, as needed to coat pan
All-purpose flour, as needed to coat pan


Step 1
Preheat oven to 350ºF.

Step 2
Place raisins in small pot; pour wine over raisins to cover by half an inch. Over low heat bring mixture to just before a boil. Quickly remove mixture from heat and allow ingredients to cool to room temperature. Once they reach room temperature, drain raisins and separate them from liquid.

Step 3
Cut bread into bite size pieces and place in large bowl and set aside. Cut ham steaks and add to bowl with bread.

Seed, dice and blanch zucchini, then drain. After draining toss with diced bread and ham.

Step 5
Grease 2 quart quiche dish, then lightly dust with flour to prevent sticking.

Step 6
Beat eggs in small bowl. In separate bowl whisk together milk, salt, allspice, apple cider vinegar, jalapeño, tarragon, raisins and goat cheese crumbles. Add beaten eggs and milk mixture to bowl of bread and zucchini, then mix with hands until all ingredients are well incorporated. Pour mixture into quiche dish and spread evenly.

Step 7
Place in oven for 35-40 minutes until set; a toothpick inserted in the center should come out dry. Let rest for 5 minutes. Drizzle with balsamic vinegar if desired. Slice and serve.
