Chorizo sausage, eggs and cheese, all brought together in one baked breakfast casserole for a dish your guests will love.
This recipe is made with
1 pound Jones Chorizo Sausage 3/4 loaf hearty bread, cut into 1/2 inch cubed 1 1/2 cups shredded cheese blend 8 large eggs, beaten 2 2/3 cups whole milk 1 1/2 teaspoon kosher salt
Step 1 In skillet, brown sausage over medium high heat until mostly cooked. Do not fully cook sausage. Sausage will cook during baking. Do not crumble sausage while browning. Set aside. Step 2 In large mixing bowl, add eggs, milk and salt. Whisk together. Step 3 Add cubed bread pieces to bottom of 3 quart oven safe roasting pan or baking pan. Top with crumbled sausage and 3/4 cup cheese. Step 4 Pour egg mixture over top. Using spoon or spatula, gently push un-soaked bread into egg mixture. Step 5 Sprinkle remainder of cheese on top of casserole. Cover and refrigerate overnight. Step 6 Next day, preheat oven to 350° F. Remover and uncover casserole, let sit at room temperature while oven preheats. Step 7 Bake 40-45 minutes or until golden brown. Serve hot. Top with garnishes if desired.
