This classic sausage gravy recipe gets a kick of spice by adding chorizo sausage. Try serving it over rice and beans or a corn muffin.

1/2 stick butter 
1/2 cup diced onion
1 pound Jones Dairy Farm Chorizo Sausage 
1/2 cup All Purpose Flour
1 quart whole milk



Step 1
In heavy bottom saucepan, melt butter over medium heat.

Step 2
After butter melts, add diced onion. Cook until onions are translucent.

Step 3
Add Chorizo. Breakup sausage into small crumbles while cooking. Do not overcook sausage.

Step 4
When sausage is mostly cooked, turn heat to low. Add flour. Continue to stir mixture. Cook on low until flour turns golden brown.

Step 5
While stirring sausage mixture, slowly add cold milk.

Step 5
Allow mixture to cook on low until starchiness is cooked out of gravy. For best results, cool mixture overnight. Reheat next day and serve. Add seasoning as desired.
