2 tablespoons canola or vegetable oil
4 large eggs
10 ounces canned or bottled nopales (cactus) strips, rinsed and well drained 
24 Jones Dairy Farm All Natural Fully Cooked Patties, heated
12 bolitos or hoagie rolls, split, toasted
6 ounces salsa verde (tomatillo salsa)


Step 1
Heat oil in large deep sauté pan over medium heat. Beat eggs in large bowl; stir in nopales* and 1/4 cup cold water. Add to hot oil; cook, stirring occasionally, until eggs are soft set. Season to taste with salt.

Step 2
For each serving, place two heated sausage patties on bottom halves of warm toasted bolito or hoagie roll; top with a heaping 1/2 cup (3-1/2 oz) egg mixture and 1 tablespoon salsa. Close sandwich with roll top.

*Fresh sliced nopales may be substituted. Sauté in oil until tender before adding beaten eggs and water. NOTE: Egg mixture may be cooked in two batches as needed for serving (to avoid keeping large amount warm). Divide ingredients in half; proceed as directed above using smaller sauté pan.
