6 tablespoons butter
18 large eggs
24 ounces Jones Dairy Farm Fully Cooked Sausage Links, cut into 1/2-inch pieces
1 cup salsa or picante sauce
12 6"-8" flour tortillas, warmed
3 cups cheddar cheese, shredded
6 tablespoons cilantro, chopped (optional)


Step 1
Melt butter in large sauté pan on medium heat.

Step 2
Combine eggs, sausage, and salsa until well blended. Pour mixture into sauté pan. Scramble to desired consistency.

Step 3
For each tortilla, place approximately 2/3 cup egg mixture on to 1 warm tortilla. Sprinkle with 1/4 cup cheese and 1 1/2 teaspoons cilantro. Roll up burrito style.
