Ingredients

3 tablespoons butter
24 large eggs
24 Jones Dairy Farm Fully Cooked Sausage Links, cut into 1/2-inch pieces
1 cup salsa or picante sauce
3 cups cheddar cheese, shredded
6 tablespoon cilantro, chopped (optional)

Preparation

Step 1
Melt butter in a large sauté pan on medium heat.

Step 2
Combine eggs, sausage and salsa until well blended. Pour egg mixture into sauté pan. Scramble to desired consistency.

Step 3

Divide egg mixture equally between 12 serving plates. Top each with 1/4 cup cheese and 1 1/2 teaspoons cilantro.
