3/4 cups unsalted butter, softened and divided
2/3 cups brown sugar, light
3 cups fresh pineapple, cut into 1-inch chunks
1 1/2 cups all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon kosher salt
2/3 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cups milk
1 1/2 cups Jones Dairy Farm Ham, diced small


Step 1
For topping, preheat oven to 350°F.

Step 2
Melt 1/4 cup of butter and the brown sugar together over medium heat and pour into a 9x2-inch round cake pan. Dry pineapple chunks between paper towels and place evenly on top of melted sugar and butter coating.

Step 3
For the cake sift flour, baking powder and salt together in bowl. In an electric mixer fitted with paddle attachment, cream 1/2 cup of butter and granulated sugar for 4 to 5 minutes or until light and fluffy.

Step 4
Gradually add eggs one at a time, beating well after each addition and scrape down bowl with rubber spatula. Add remaining dry ingredients alternating with milk in thirds until fully incorporated. Be sure to begin and end with flour mixture while incorporating. Stir in ham.

Step 5
Pour batter into cake pan and spread evenly. Bake for 45 to 55 minutes, or until a tester is inserted in the center of the cake and comes out clean. Cool the cake for 15 minutes in the pan. Invert the cake onto a plate then lift away the pan and serve.
