Cherrywood Smoked Slab Bacon

Dry Aged Cherrywood Smoked Bacon, Half Slab

Product Information


8oz protein
eggs, whisked
4 fl/oz heavy cream
1 Tbsp Grand Marnier
1 Tsp paprika
1 Tsp salt
1/2 Tsp cayenne
1/2 Tsp white pepper
3oz cooked Cherrywood Smoked Bacon
1 Tbsp, fresh dill, minced
1 Tsp, orange zest


Bacon Mousseline Prep Directions

Step 1

To make the base, combine protein and eggs in a food processor and pulse for about 15-20 seconds.

Step 2

Add seasonings and pulse for 5 more seconds.

Step 3

Add the cream and pulse for 30 seconds.

Step 4

Fold in the rest of the ingredients. 

Step 5

Poach a test sample, try for seasoning and adjust accordingly.
