12 pieces Jones Dairy Farm Cherrywood Smoked Dry Aged Bacon 
12 6-inch bamboo skewers 
3 blood oranges, juiced and zested
1 tablespoon shallots, chopped very fine
2 tablespoon ketchup 
1/2 cup rich pork stock 
1 tablespoon honey 
1 teaspoon kosher salt 
1/2 teaspoon ground white pepper 
2 teaspoon corn starch, dissolved in water 


Step 1
Preheat oven to 300˚F. Lace bacon in a back and forth pattern onto bamboo skewers. Place skewered bacon on baking sheet lined with silpat liner or parchment. Cook bacon for 15 minutes, flip skewers and cook for an additional 10 minutes or until most of fat is rendered off. Place skewers on cooling rack to allow grease to drain off. Turn oven up to 350˚F.

Step 2
Place blood orange juice and zest, shallots, ketchup, pork stock, honey, salt and pepper in sauce pan and bring to simmer. Allow to cook for 10 minutes before whisking in cornstarch mixture. Remove from heat. 

Step 3

Coat bacon with sauce and return skewers to oven at 350˚F and cook for 8-10 minutes or until they begin to slightly caramelize. 

Step 4
Serve skewers with additional sauce for dipping and a slightly sweet and sour vegetable slaw.
