Ingredients

8 slices Jones Dairy Farm Dry Aged Cherry Hardwood Smoked Bacon
1 chipotle in adobo (seeds removed for less heat), minced
Juice from 1 lime
1/4 cup cilantro, chopped
1/2 cup mayonnaise
1/4 cup sour cream
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon dried oregano
1/8 teaspoon dried dill
4 (6-inch) flour tortillas
Shredded lettuce
Diced tomatoes

Preparation

Step 1
Cook the bacon in a skillet until crisp. Set aside to cool completely.

Step 2
To make the chipotle ranch combine chipotle pepper, lime juice, cilantro, mayonnaise, sour cream, cumin, garlic powder, salt, oregano and dried dill in a food processor or blender. Process until smooth.

Step 3
To assemble the tacos: Place 2 slices of bacon down the center of each tortilla. Top with shredded lettuce and diced tomatoes, then drizzle chipotle ranch over the top.
