Cherrywood Smoked Slab Bacon

Dry Aged Cherrywood Smoked Bacon, Half Slab

Product Information

Ingredients

2oz onion
1oz carrot
1oz celery
1/2oz tomato paste
4 slabs Cherrywood Smoked Bacon
2oz apple cider vinegar
6oz chicken stock
1 sprig thyme

Preparation

Braised Bacon Slab Prep Directions

Step 1

In a saucepot, sear the bacon slabs on both sides. Remove the bacon and set aside.

Step 2

In the pot, caramelize the onion, carrot, celery and tomato paste.

Step 3

Deglaze the pan with vinegar and add the bacon back in.

Step 4

Add the chicken stock and thyme.

Step 5

Braise for 30-40 minutes until bacon is tender.
