1 tablespoon olive oil
3 cups green bell pepper, diced
3 cups medium onion, diced
1 tablespoon garlic cloves, minced
1/2 cups flour
44 ounces tomatoes, diced, undrained
24 ounces chicken or beef broth
1 tablespoon thyme leaves, dried
1 1/2 teaspoons oregano, dried
1 tablespoon hot pepper sauce
32 ounces okra, sliced
24 Jones Dairy Farm Full Cooked Sausage Links, sliced
18 ounces Jones Dairy Farm Ham, cut into strips
1 1/2 quarts rice, cooked
3/4 cups parsley, chopped


Step 1
Heat oil in large saucepan over medium heat. Add green pepper, onion, and garlic; cook 8 minutes, stirring occasionally.

Step 2
Add flour; cook and stir 1 minute. Add tomatoes, broth, thyme, oregano, and pepper sauce; bring to a simmer. Cover and simmer 10 minutes.

Step 3
Stir in okra and sausage; simmer covered 10 minutes. Stir in ham; simmer uncovered 3 minutes longer.

Step 4

Portion 1-3/4 cups into shallow bowls. Top each with 1/2 cup rice and 1 tablespoon parsley.
