Preparation
Step 1
To make the sauce combine cherries, chipotles, cherry extract, water and allspice in small saucepan,. Bring to boil and lower heat. Simmer 8 minutes. Remove from heat and pour carefully into blender. Add sugar and xanthan gum; puree. Pour back into saucepan and simmer 5 more minutes. Set aside.
Step 2
To make the ham, preheat oven to 325°F. Place ham in ovenproof roasting pan. Add 1-inch of water to pan. Score top 2/3 of ham in diamond pattern to depth of about 1/4-inch. Pierce with cloves (if using). Tent ham with foil and bake 45 minutes. Remove from oven and baste generously with cherry chipotle sauce. Return to oven, uncovered, for 20 minutes. Remove and baste again, then return to oven for another 20 minutes or until temperature at center is 140°F. (This will take longer if you are cooking a larger ham.)
Step 3
Remove ham from oven and baste with sauce once more. Heat molasses in microwave until runny. Drizzle molasses over top of ham. Remove cloves before carving.
