Cherrywood Smoked Slab Bacon

This recipe is made with

Dry Aged Cherrywood Smoked Bacon, Half Slab

Product Information


16oz Cherrywood Bacon Slab
2oz soy sauce
6oz white wine
8oz vegetable stock
1 inch thumb, ginger, crushed
12 garlic cloves, crushed
1 tsp red pepper flakes
1 tsp Chinese 5 Spice
2oz brown sugar
Bao Dough (see full recipe for ingredients and instructions)


Deconstructed Braised Bacon Chinese Steam Bun Prep Directions

Step 1

Combine all ingredients together in a 4" metal 1/6 pan. Cover with foil. Bake at 375°F for 1.5 hours or until tender enough for a skewer to easily pierce without any resistance.

Step 2

Let cool.

Step 3

Square off the slab and then divide into four equal portions. Score the top of the portions in a diamond pattern. Sear the scored side of the bacon until crispy.

Step 4

Flip portions over and return to the oven to heat throughout.

Step 5
