32 ounces chicken broth
6 ounces prepared demi-glaze concentrate
1 1/2 cups cherry preserves
4 canned chipotle peppers, pureed
1/4 cup adobo sauce
24 slices Jones Dairy Farm Dry Aged Cherry Hardwood Smoked Bacon, cooked, drained and crumbled
24 boneless center cut pork chops, about 3/4" thick


Step 1
Heat broth to simmering in medium saucepan. Whisk in demi-glaze concentrate until smooth. Continue heating until thickened.

Step 2
Stir in preserves, puréed peppers, adobo sauce, and bacon. Continue heating until sauce has been reduced to about 1 quart and is a rich mahogany color.

Step 3
Meanwhile, grill or pan-fry pork chops until they are golden on each side and reach an internal temperature of 160°F, or desired temperature, about 5 minutes per side. Serve 2 chops with approximately 1/3 cup sauce per serving.
