Product Information


12 ounces Jones Dairy Farm Uncooked Pork Sausage Roll
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon garlic powder
1 teaspoon chili powder
3 tablespoons prepared tomato salsa
2 tablespoons green onions, chopped
2 cups fresh peaches, chopped
3 tablespoons red onion, chopped
1/4 cup fresh cilantro, chopped
1 tablespoon fresh lime juice
1 tablespoon honey
Salt and pepper to taste
1/4 cup sour cream
1 tablespoon milk
1 teaspoon chipotle powder 
6 corn or flour tortillas, warmed


Step 1
In a medium sauté pan, cook sausage for about 8 minutes, breaking up with a spatula into small pieces. Drain.

Step 2
Add cumin, coriander, garlic powder, chili powder, tomato salsa and green onions. Cook for another 2 minutes. Set aside.

Step 3
For the peach salsa combine fresh peaches, red onion, cilantro, lime juice, honey and salt and pepper in a small bowl and set aside.

Step 4
For the chipotle crema whisk together the sour cream, milk and chipotle powder until smooth.

Step 5
To build the tacos: Top a warmed tortilla with a few tablespoons of the sausage mixture. Spoon on peach salsa and a generous drizzle of crema. Serve immediately.
