3 tablespoons canola or vegetable oil
3 cups chopped onion
9 cloves garlic, minced
4 large jalapeño peppers, thinly sliced
1 1/2 pounds Jones Dairy Farm Fully Cooked Chicken Sausage Links or Patties
2 tablespoons ground cumin
2 tablespoons ground coriander
3/4 teaspoon cayenne pepper
6 cups reduced sodium chicken broth
3 (16 oz) cans no salt added navy or cannellini beans, undrained
Optional garnishes: diced ripe avocado, lime wedges, chopped cilantro, crumbled queso fresco cheese and pickled red onions


Step 1
Heat oil in very large saucepan or stockpot over medium heat. Add onion, garlic and jalapeños cook and stir for 5 minutes. Slice or chop chicken sausage and add to onion mixture along with cumin, coriander and cayenne pepper. Cook and stir for 5 minutes.

Step 2
Stir in broth and simmer for 10 minutes. Stir in beans and continue to simmer 10 minutes. Ladle into shallow bowls and garnish as desired.
