1 small jalapeño pepper, thinly sliced
1/4 cup packed cilantro leaves
3 tablespoons carrot, grated
3 tablespoons cucumber, julienned
3 tablespoons red cabbage, shredded
1 1/2 tablespoons seasoned rice vinegar
1 tablespoon mayonnaise
1/2 teaspoon sriracha hot sauce
1 (6 to 7-inch) soft baguette, split, lightly toasted
3 slices Jones Dairy Farm Dry Aged Bacon, cooked crisp, drained


Step 1
Combine jalapeño, cilantro, carrot, cucumber, cabbage and rice vinegar in small bowl. Toss well and set aside. Combine mayonnaise and hot sauce and spread evenly over cut sides of baguette. 

Step 2
Fill baguette with bacon and vegetable mixture and serve.
