1 tablespoon mayonnaise
2 teaspoons fresh thyme or rosemary, chopped
1/4 teaspoon finely shredded lemon peel, optional
2 to 3 slices ripe tomato
Salt and black pepper
2 slices sourdough bread, lightly toasted
3 slices Jones Dairy Farm Dry Aged Bacon, cooked crisp, drained
1/4 cup packed sliced kale leaves


Step 1
Combine mayonnaise, thyme or rosemary and lemon peel. Season tomato slices with salt and pepper to taste.

Step 2
Spread mayonnaise mixture over toast and fill sandwich with bacon, tomatoes and kale.
