1 (12-inch) sourdough baguette
1 ounce quince paste, room temperature
2 ounces mayonnaise
3 ounces brie, rind removed and very soft
1 beefsteak tomato
2 ounces red onion, shaved
10 ounces Jones Dairy Farm Cherrywood Smoked Ham, thinly sliced
3-4 leaves red leaf lettuce


Step 1
Cut baguette in half to create a top and bottom and reserve.

Step 2
Combine quince paste and mayonnaise, mix until very well blended; spread on top of bread, ensuring an even coating.

Step 3
Spread brie along bottom. If your bread has a lot of pockets and bubbles, more brie can be used to ensure that there is cheese in every bite.

Step 4
Slice tomato as thin as possible and cut in half to form half moons; lay end to end on the bottom half of the bread.

Step 5
Lay a thin layer of shaved red onion on top of tomatoes. Note: when shaving the onion, the thinner the onion, the more delicate the flavor will be.

Step 6
Layer ham on top of onions, making to fold slices to give sandwich more height and ham from spilling out over sides of bread.

Step 7

Finally, lay torn stripes of red leaf lettuce down on top of ham and place top of bread on top.

Step 8
Secure bread with toothpicks and stuffed olive if desired. Sandwich can be enjoyed either cold or pressed, if pressed, omit lettuce. Serve with a pickle spear and side salad or chips.
