3 cups mayonnaise
2 tablespoons curry powder
42 ounces chicken breast, cooked and chopped
2 cups tart cherries, dried
1 1/2 cups celery, diced
1 1/2 cups chopped walnuts, toasted
24 slices whole grain bread, toasted
36 slices Jones Dairy Farm Dry Aged Cherrywood Smoked Bacon, cooked and drained


Step 1
Combine mayonnaise and curry powder until well blended. Stir in chicken, cherries, celery and walnuts until combined.

Step 2
For each sandwich: place a #6 scoop chicken salad on one slice of bread; spread evenly. Top with 3 slices cooked bacon. Cover with second slice of bread. Cut in half, securing each half with a wooden pick.
