2 slices Jones Dairy Farm Uncooked Sliced Bacon
2 eggs
1/4 cup mache or any other tender green
Salt and pepper to taste
1 tablespoon mayonnaise
2 slices ciabatta bread, lightly toasted
2 slices tomato
2 leaves fresh basil


Step 1
Preheat oven to 350˚F. Place bacon on a small parchment lined sheet tray. Bake 5-7 minutes until bacon is crispy.

Step 2
While bacon is cooking, cook two eggs until yolks are soft and sunny side up. When bacon is finished, reserve bacon fat that has collected in pan. Toss mache in warm bacon fat and season with salt and pepper as needed.

Step 3
Spread half of the mayonnaise on one side of the toasted ciabatta bread, use remainder on the other slice. Add bacon to bread, then layer the mache, sunny side up eggs, tomato slices and basil. Top everything with second slice of toasted ciabatta and press together gently.
