Ingredients

24 ounces red leaf lettuce
48 ounces ripe avocados, peeled and sliced
48 ounces ripe papayas, peeled, seeded, and sliced, or ripe mangoes, peeled and diced
32 ounces Jones Dairy Farm Boneless Ham, chopped
10 ounces prepared mango chutney
2/3 cup canola or vegetable oil
6 ounces fresh lime juice
1 teaspoon salt
1/4 teaspoon cayenne pepper (optional)
1 ounce cilantro, chopped

Preparation

Step 1
For each main dish salad arrange 4 leaves of lettuce on each plate. Arrange 4 avocado and 4 papaya slices alternately over lettuce. Mound 2-1/2 ounces ham in center.

Step 2
Cut any large pieces chutney into small pieces. Combine chutney, oil, lime juice, salt and cayenne pepper until well blended.

Step 3
Drizzle dressing over each salad. Sprinkle each with 1 tablespoon chopped cilantro.
