Ingredients

2 tablespoons olive oil
1 yellow onion, finely chopped
2 medium carrots, sliced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dried oregano
6 cups low-sodium chicken broth
9 ounces Jones Dairy Farm All Natural Fully Cooked Sausage Patties, chopped
3/4 cup small pasta, such as acini di pepe or orzo
6 ounces fresh kale or spinach, stems removed and chopped
Freshly grated parmesan, for serving

Preparation

Step 1
Add oil to large stockpot set over medium-low heat. Once oil is hot, add onions, carrots, salt and pepper and cook until onions are translucent, about 5 minutes. Add oregano and cook 1 minute more.

Step 2
Add broth and sausage and bring to just a boil, then reduce heat and simmer 5 minutes. Add pasta and cook until tender, about 5 to 10 minutes more.

Step 3
Add kale and cook until just wilted, 1 to 2 minutes. Serve with freshly grated Parmesan sprinkled over top.
