12 ounces Jones Dairy Farm Ground Sausage
1 cup onion, chopped
2 cloves garlic
5 cups chicken broth
15 ounces diced tomatoes, drained
1 cup carrots, thinly sliced
 2 tablespoons fresh basil, minced
1 teaspoon dried oregano
8 ounces tomato sauce
1 1/2 cups zucchini, sliced
8 ounces fresh tortellini
2 cups fresh spinach
Freshly grated parmesan cheese


Step 1
In large pot or dutch oven, cook sausage over medium heat until browned and cooked through, breaking it up as it cooks. Add onion and garlic and cook until softened, about 5 more minutes.

Step 2
Stir in chicken broth, drained tomatoes, carrots, basil, oregano and tomato sauce. Reduce heat to medium-low and cook uncovered for 30 minutes.

Step 3
Add zucchini and cover. Cook for an additional 20 minutes.

Step 4
Uncover and add tortellini and spinach. Cook for 10 minutes or until tortellini is soft. Serve topped with parmesan cheese.
