18 ounces Jones Dairy Farm Ham, cut into strips
48 ounces red kidney, black or adzuki beans, canned, rinsed and drained
48 ounces ripe tomatos, diced + 3 cups corn (fresh or thawed)
3 cups sharp cheddar cheese, shredded or diced
1 1/2 cups olives, sliced and pitted or additional corn
1 1/2 cups chunky salsa
3/4 cups mayonnaise
3/4 cups fresh cilantro or parsley, chopped
16 ounces mesclun salad greens
Tortilla chips or blue corn tortilla chips (optional)


Step 1
Combine ham, beans, tomatoes, corn, cheese and olives.

Step 2
In separate bowl combine salsa, mayonnaise, and cilantro. Toss salsa mixture with ham mixture until well blended.

Step 3
Refrigerate, covered, several hours or overnight. Serve salad over salad greens. Garnish each portion with tortillas.
