Product Information


8 ounces onion, diced small
Salt and black pepper to taste
4 ounces celery, diced small
4 ounces carrot, peeled and diced small
1 tablespoon olive oil
3 garlic cloves, minced
6 large sweet potatoes, peeled and quartered
64 ounces chicken or vegetable stock
1 pound Jones Dairy Farm Ground Sausage, browned and crumbled  
Chives, minced, as needed


Step 1
Begin by seasoning and sweating onion, celery, carrots and garlic in oil over medium-low heat for about 10 minutes or until all ingredients are tender; do not allow any vegetables to gain brown color as this will darken the color soup.

Step 2
Once vegetables are tender, add sweet potatoes and stock. Season to taste. Turn up heat and bring to a light boil, then turn heat back down to low and simmer until sweet potatoes are fork tender. Once fully cooked, strain liquid from solids and keep separate.

Step 3
Fill blender about 75% full of solids, then top off with cooking stock. Blend on low speed until a semi-liquid consistency, then blend on high speed for about one minute. The soup should be silky smooth.

Step 4
Add in browned sausage. Sprinkle with chives. Makes 1.5 gallons.
